What is Level 3: Liquidised?

IDDSI Level 3, or Liquidised, refers to foods that have been blended to a smooth consistency and are easy to swallow. These foods should not have any lumps or granules and should resemble a thick, pudding-like texture. Level 3 is ideal for individuals who can tolerate some texture but require assistance with swallowing.

Characteristics of Level 3 Foods

  • Consistency: Foods at Level 3 can be eaten with a spoon or sipped from a cup but cannot be sucked through a straw.
  • Testing Method: Use a fork to test consistency. When lifted from a cup, the food should flow slowly and continuously through the tines of the fork. If the food clings excessively to the fork or does not drip, it is too thick.
  • Flow Test: Food that flows through a 10 mL syringe at a rate of 1-10 mL per second is considered Level 3 compliant.

Suitable Food Options

  • Smoothies and yoghurt drinks
  • Pureed soups (e.g., pumpkin, tomato)
  • Thickened fruit purees (e.g., applesauce)
  • Custards and puddings

Preparation Methods

  1. Blending: Use a high-speed blender to puree foods until they reach a smooth consistency. You may need to add liquids (such as broth or water) to achieve the desired thickness.

  2. Straining: For certain foods, straining through a fine sieve or cheesecloth can help remove any remaining lumps and achieve a silky texture.

  3. Thickening Agents: Consider using commercially available thickening agents to adjust the viscosity of liquids to meet IDDSI guidelines.

  • Experiment with flavours and combinations to make meals enjoyable.
  • Use colourful fruits and vegetables to create visually appealing dishes.
  • Serve foods at room temperature or slightly warmer for better flavour.
